Black Fox Cask Finish

Based on a 160-acre farm just outside Saskatoon, Canada – affectionately nicknamed The Paris of the Prairies – Black Fox Distillery are a grain-to-glass operation deeply concerned with terroir. While the distillery grows almost all of the grain and botanicals for their spirits onsite, perhaps the most distinctive aspect of their approach is that they age their whiskies completely outdoors. This very deliberately exploits the region’s wildly changing temperatures, the oak’s rapid expansion and contraction making it exceptionally active and generating deep flavour in a comparatively short space of time.

Black Fox’s Cask Finish is a limited release with no set calendar, simply rolled out whenever the distillery has a particularly good cask to offer. The current edition is made from 100% estate-grown malted barley and finished in an Amarone wine barrel, the wine cask adding sweet, dark fruits and a floral back note to the robust influence of new American oak. Bottled at 48.1% abv, free from artificial colour or chill filtration.

Rich fruitcake accented with gingerbread and parma violets on the nose; the palate is bold, with spicy forest fruits, buttery citrus and a hint of chewy leather before the warm, slightly tart finish.
