Black Fox Blended Description
A farm-based, grain-to-glass distillery based just outside Saskatoon – the Paris of the Canadian prairies – Black Fox are deeply committed to exploring ideas of terroir with their spirits. They employ both crop and climate to do so, growing the vast majority of the ingredients for their whiskies and gins on their 160-acre estate and – uniquely – aging their whiskies completely outdoors. The wild temperature swings of the prairies cause the barrels to expand and contract, a breathing-like process that accelerates flavour extraction from the oak and generates deep character in a short space of time.
Their blended whisky is a limited annual release that represents the best of the distillery’s year. It is crafted from three casks, each from a distinct grain: rye, oat and triticale (a rye/what hybrid). Aged in new American oak and bottled at cask strength of 49% abv; Black Fox do not chill filter or add colour to their whiskies.
Rich pralines and more than a hint of umami on the nose ease into warm chocolate custard, butterscotch and baking spices on the palate. A dry finish, with fresh green herbs and oak spice.
